FFWD: Catching up with Chicken

I did not make the assigned recipe for this week, Helen's All White Salad from Dorie Greenspan's Around My French Table, however, if you want to see how all the other Doristas did with this recipe, click here.  I'll be heading over to check them all out when I complete this post.
Ok, so what did I do with all my free time since I did not make the All White Salad?  In my attempt to catch up with the other Dorista's, I made Mme. Maman's Chopped Liver and Hurry-Up-And-Wait Roast Chicken.

I have to say, I loved the Chopped Chicken Liver!

Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos I have attempted to make chopped chicken liver before, without a recipe, how hard could it be, I thought.  Well previous attempts have been boring and bland.  Well, Dorie's recipe is fantastic.  The addition of caramelized onions made such a big difference...yum. Even better than my favorite deli...shhh.  Click here to check out the other versions of Mme. Maman's Chopped Chicken Liver.

So what did I make to go with my chicken liver, ha, ha, roast chicken of course.

Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos I started with organic chicken.  Ok, weird way to make chicken, especially since I was so skeptical that the chicken was not going to be cooked through.  The end result was not pretty, but tasted delicious.

  1. Great catch-up! Glad you enjoyed both chickens. It is funny to stand the chicken up - the result is mighty tasty.

    Happy Valentine's!

  2. Funny… I skipped the livers and looked forward to this salad. I was a vegetarian for a long time.. an attraction to sticks and twigs runs deep. The roasted chicken looks gorgeous, glad you got to catch up. Happy Valentine's Weekend.

  4. Wow, Gracie - you're doing a great job of catching up! We didn't make the liver, but loved that chicken.

I love your blue glass tiles, too!

    Happy Valentine's Day! <3

  5. Nice catch up! I enjoyed the hurry up and wait chicken, but will probably stick with the lazy chicken (my fave from the book's whole chicken recipes).

  6. Well done you !!! And really well done I should say because that salad was NOT a hit in my house. We did, however, enjoy both of these chicken dishes with the livers being a surprise hit. The taste was fabulous and the little things are crazy cheap. A winning combo for sure :) And that photo with the pickle had me drooling.....Your little dog must have been going berserk with the aromas from this week - hope he got a wee taste :)

  7. Good job on the "Chicken Catchup". Wasn't the chopped liver great? I remember the roasted chicken being good too, though not as good as Dorie's Lazy Person's Chicken. I don't recommend the salad, though it seems Doristas are split on it.

  9. I like the hurry up and wait chicken a lot. I'm glad you enjoyed it (and the chopped liver, which I wasn't brave enough to make!). I wasn't a fan of the salad, although I guess it's worth a try.
