Family Dinner: Adobo Chicken, Filipino-Style

Adobo Chicken
Adapted from an old recipe card from Uwajimaya and

4 lbs chicken, thighs
1 tsp canola oil
1/2 cup apple cider vinegar
1/2 cup soy sauce
1 cup water
3 bay leaves
2 teaspoons peppercorns
6 garlic cloves, crushed
1 medium onion, chopped
3/4 teaspoon ground pepper

Brown the chicken in oil.
Combine all of the other ingredients in the slow cooker. Place the chicken in the slow cooker. Mix. Cook on high for 3 hours or on low for 6 hours until pork or chicken is done .
I served this with steamed rice, sesame green beans, cucumber salad with rice vinegar. YUM.

  1. I don't know about you, but I could eat chicken adobo and rice even as breakfast because it's so good. My parents can make it very well.
